Sushi

Sushi is the best known and most popular Japanese dish, which is offered in many Asian restaurants. But more and more professional delivery services or takeaways are also offering this delicacy.

Sushi preparation is a master task in Japan

Many Asian cuisine lovers who like to order Asian food for home delivery do not know that in Japan only trained sushi masters can prepare this dish perfectly. This training takes around 10 years, of which the first year alone is dedicated to washing the rice!

What is sushi?

This is where misunderstandings often arise, because the term "sushi" does not refer to the fish, but to the rice. It refers to a very special Japanese short grain rice that is sour-sweet and also cold. This rice can have different toppings. Tuna and salmon are the most popular, but there are also other toppings that are quite tasty but not traditionally Japanese. Nevertheless, it is precisely this popular variant that leads to sushi being associated with fish in Asian food.

How is it prepared?

Preparing good sushi rice is an art. This is called Itamae. After cooking, the rice must still be firm to the bite, but still airy and loose. Then it can be easily formed by hand into small, long rolls. These must be stable enough to be easy to grasp with chopsticks and small enough to disappear in the mouth in one bite.

The coating

There are a very large number of different types of sushi. Basically, there are two main forms: Maki and Nigiri , on which all other variations are based. The distinction itself is very simple: With Maki, the rice is rolled together with the fish or vegetables in a nori sheet. With Nigiri, however, the fish lies loosely on the rice.

Well-known sushi variations – a selection

Maki – the most well-known form of sushi.

Traditionally, the rice rolls are rolled by hand using a bamboo mat. The nori (seaweed sheet) can be placed inside or outside, depending on the variant. The filling consists of rice, fish and vegetables.

Futo-Maki – with three fillings

Here, fish, rice and vegetables are placed in the nori sheet. Typically, this sushi consists of three fillings per roll.

Ura-Maki

Fish and vegetables are placed directly in the nori sheet and the rice is on the outside. It is also decorated with sesame seeds or fish eggs.

Te-Maki Sushi

Temaki look like small bags made of nori sheets. These are rolled by hand (without a bamboo mat) and contain the classic ingredients, fish, vegetables and rice.

Gunkan-Maki

Gunkan-Maki also consists of nori sheets that are cut into strips and formed into low rolls. A rice base is placed inside and fish roe and/or caviar is placed on top.

Nigiri

Here, the rice is formed into a narrow roll and topped with fish. To make the dish more stable, a strip of nori is often placed around the nigiri. It is still somewhat unstable and must be carefully dipped into the soy sauce.

Sashimi

This version uses only first-class, fresh and raw fish. There is no rice or vegetables as a side dish. Sashimi is also not seasoned. The most famous meat used is the puffer fish. However, this is poisonous and a chef who offers it even needs his own license!

Tataki

This refers to a specific Japanese method of preparation. The fish is briefly seared and then cut into slices and served cold with salad. This can also be done with meat.
